I was thinking. If i bought a usb hub and plugged it into the back of my Wii, would all the USB ports on the hub be fully functional?

Yes, any and all USB storage devices will recieve at least generic support on the Wii, as they do on most other platforms.
To clarify, any device that is treated as an external disk drive on your computer will recieve, at the very least, support to be used as an external drive on your Wii.
This means that a USB hub that is externally powered(this is a must for the Wii, as it adheres to strict power regulations that only permit two devices hooked up at once) will allow you to expand the amount of connected devices.
