Yeah, just because your a "Hardcore" gamer doesn't mean you only play shooter games.
The list that Darkprinny put out pretty much perfectly describes the difference between the two.
I like to consider myself hardcore, what the heck, I'm a video game nerd.

I'm a little more towards the hardcore side, but I am mostly in the middle. I own a 360, but most of the games I own are pretty easy.

Probably casual for most games. Except for Metroid Prime 3, as I beat it on 100% Veteren. Im very hardcore around Samus. I can really work her good...

I hate minigames and any sort of garbage party game, so I guess I couldn't be a "casual" gamer.
But I really don't play videogames enough to consider myself "hardcore," I don't think. Maybe an hour or two a day, sometimes not at all.

I think the simplest way to define the terms "casual gamer" and "hardcore gamer", is that hardcore gamers spend more time gaming, while casuals will pick up and play for a few minutes a day, or a few hours a week. Also the effort they put into a game varies.
However, if you play Halo 3 for an hour every day, but never really take the time to learn to get better and become more advanced, you could still be called a casual gamer. On the other hand, another person may only play for 2 hours on the weekends, but be really good, and (IMO) could be called a hardcore gamer...
There's too many different perspectives to just define the terms as one, straightforward thing. Unfortunately they've been thrown around by the video game media so much as to warp the simple meaning it had from the beginning.

Somedays I play 30 minutes, others I play 6 hours. I do this yet manage to do fine in school and keep in shape. Im in the middle. Im actually hardcore with MKW, I got 10 races in a row 1st place

No, a Wii too. I also still have a PS2, SNES, and PSP. The 360 is just the most "hardcore" of the systems I own.

I have like 9 Wii games (including Wii Sports), 3 360 games, probably 15+ PS2 games, maybe 11 SNES games, 7 PSP games, and an unlimited supply of PS1 games.

i am a hard core gamer, Ive accomplished playing cal-invite for counter-strike:source but have recently gone inactive from it to free up my time for other stuff like wii  . I plan to carry on my hardcore gaming where ever, what ever im playing.

I'm casual on my approach to gaming, but I'm a bit towards the hardcore side when it comes to how much I game. (Sleeping is overrated)
