Boom Blox is a good game even without any special circumstances, and most if not all (haven't played through everything) of the levels are nunchuck-optional.
WarioWare Smooth Moves is also a good choice, and also a good game.

Off Topic:
A recent alligator attack near New Orleans left an 11 year old boy without an arm. Though the gator was caught and the arm removed from his stomach, surgeons were unable to reattach it. One of the first things out of the boy's mouth when he woke up from surgery was how disappointed he was about not being able to play his PS3 anymore. In response, a local radio station got the boy a Wii and lots of accessories.
