No 2000 or 3000 year for me. Don't get me wrong, Aria of Sorrow was good.
This is just me, but... :
Either a retelling of the Lament of Innocence game (which was awesome, but I'd prefer a little more historical backleading into Dracula, such as him ACTUALLY being Vlad Tepes III reborn or something.), and I liked Leon Belmont.
Or something with Sonia Belmont (I liked the sudden female protagonist.) or with the surname once again gone, and you don't know if you're playing a member of the bloodline or not (revealed yes or no later on.)
I liked Circle of the Moon and Aria of Sorrow, but the anime-look in Dawn of Sorrow was lame. Seriously, I liked the art design predating that. Making it anime-esque killed the mood and look for me. Oh, but anyway...maybe make it play more like Aria and Circle, not so much RPG elements as DoS. Perhaps a return of the inverted castle or the introduction of mirrors (the one like in DMC), in which you go to an alternate world/version of the castle and stuff. Perhaps have them oggle on about trying to revive Dracula, but failing and it's just some lunatic thinking he IS Dracula or something. (unless they have old school Vlad in it).
And the return of the Belmont Whip, in which you upgrade it via elemental and possible metalic/spiritual upgrades
