I'm just wondering if its possible to use the sensor bar (and therefore the wii) with a projector. Normally it would go on the top of the tv but the projector projects the image onto the wall etc. The only way i can think of this working is to put the sensor bar above where the projecter projects the image to. Anyone have any ideas about this?

Yes it's possible, just like the bazooka on Snes you can use it with any tv, monitor or projector.

I'm sure that it's possible. Projection systems are becoming too popular for Nintendo to have just left them out of the picture. I don't know how they'll work with it, but they surely will.
