I've connected my wii console to my plasma HD TV with both the standard and a component cable using the S-VIDEO plug and saw no differnece - the standard cable might have been a bit better.

Using the standard "sports" games, should I see a difference?

What you're saying doesn't even make sense. A component cable doesn't have anything to do with an S-Video plug. This probably explains why it looks the same.

The cable I have (DreamGear) has two sets of output - one composite video (RGB) with audio and one with an S-VIDEO connector along with R/L RCA audio and a yellow video RCA plug. It's definitely an S-VIDEO plug as the TV does recognize it as S-VIDEO input.

I don't know a ton about this, but on an HD tv you might not see a huge difference. Component cables only upgrade the res from 480i - 480p. A component cable has 5 plugs instead of three, I think, so make sure it really is a component cable.

EDIT: Just checked, that cable has four plugs, while my component cable has five, i don't know if that is significant or not.

Right. But what you aren't understanding is that S-Video is not Component. S-video is well S-video... it will give you very slightly better picture but nothing to write home about.

Component Cables for the Wii (and in general) look a little something like this:

They have a Red, Blue, and Green video connectors, as well as a Red and White audio connector.

If you have a HDTV, it should have the Blue, Green, and Red connectors on the back, represented by Y, Pb, and Pr. And once you connect these, you need to also turn the wii to output 480p in the Wii settings.

I wasn't able to select the 480p setting in the wii settings when using the S-Video but once I connected the RGB cables instead of the S-VIDEO, I was able to select the 480p setting and the image did impove.
