To turn off e-mail notifications, go to User CP --> Edit Options. Under the heading 'Default Thread Subscription Mode' you are given the option to turn off e-mail notifications.
For your second question, go to your profile and click 'Style Settings.' then click 'Edit Style' to change colors of backgrounds, fonts etc.
