Is it possible to go to some sort of store to buy just the cables for a the N64,NES,SNES etc.?

Well, around here you can. Game stores like Ebgames and gamezone have them for sure. Keep in mind that you can use video and audio cables from the Gamecube for the N64 and SNES, I just found that out when I bought my SNES at a rummage sale without them.

Ebay uselay has cables

NES cables are the easyest to get (you can use one from a video)
Addapters/plugs can be borght from most placeies
