I don't presume to be the first one to use this, but I've recently developed a move with Yoshi I like to call 'The Roll-O'.
It's not an entirely new move, but it's essentially the best way I've found to use Yoshi's eggroll.
When someone's tailing you, release a Titan's Chip, then activate the Eggroll. It will usually crush your pursuer, and performing the Titan's chip as normal will bring Yoshi right out of his egg and kicking.
